We saw an interesting article about starvation in which the comment was
made that there are really two types of starvation. One, of course, is
caused by too little or no food at all. But there is another type of
starvation caused by serious malnutrition, and even though the U.S. is
the fattest nation on the planet, our bodies are starved for important
nutrients and enzymes. It’s partly why we’re so fat, because we keep
eating and eating, but we’re eating highly processed, cooked foods that
have the essential components burned out of them. Cooking removes up to
80% of food’s important amino acids, fibers and vitamins.

Childhood obesity has steadily grown as a serious concern in the United States. Among elementary school children, the percentage of children afflicted with the disease has tripled over the last three decades. Children with obesity suffer both physically as well as emotionally. Contributing factors to the problem include sedentary lifestyles, inadequate emphasis on physical education, and dietary influences. There are several innovative programs that have proven to be successful in schools, such as the one percent or less milk program, the fresh fruit and vegetable pilot program through the U.S. Department of Agriculture and the General Mills Box Tops for Schools. Changes that school districts can make to improve the well-being of children include serving healthier school meals, educating children and parents on healthy eating, creating better structured after school programs, increasing physical activity and conducting fundraising activities which support healthier lifestyles for children.

What if there were a significant identifiable risk factor for the cause of coronary heart disease, stroke and peripheral vascular disease (fatty deposits in peripheral arteries). Is this something that you would want to know about? More importantly would you want your doctor checking your status with regards to this risk factor during your checkups?

By significant I mean that 40% of the 12.5 million deaths due to strokes that occur globally each year are a result of this risk factor. What about the estimated 16.7 million people who die each year (globally) from cardiovascular disease. Of those 16.7 million this risk factor increased their risk of heart attack by 50%. Of course we hear a lot about Alzheimer’s disease, but we don’t hear that our chances of developing this disease are increased by 150% by this very same risk factor.

The Salad

Today Thanksgiving is celebrated in the United States.
I wish everyone, every where, a great day.
We should always be grateful for our life and our blessings, everyday of the year.

I believe we should be grateful everyday for Mother Nature bountiful gifts.
She provides our food, our drinks, our health and the happiness to enjoy nature everyday.

This is why I choose today to celebrate with a salad.
It can be refreshing, it can be spicy, or it can be sweet.
It can be very nutritious, a whole meal in a plate.
And it helps manage our weight easily.
